- Kolache filled with tradition

Beverle Gottfried, via e-mail, and Betty Staudacher of Wauwatosa sent recipes for making kolache as requested by Sheryl Strongman of Rocklin, Calif.
Gottfried sent a kolache recipe she also calls a cookie. She got it from the Martha Stewart Web site (www.marthastewart.com) last year "and they are great. The recipe was the cookie of the week -- originally submitted by Karen Maderich of Waukesha -- picked from 5,000 entries sent to Martha Stewart."
Staudacher wrote: "The recipe comes from my Czech grandmother, Mamie Rosecky, who with my grandfather, Anton Rosecky, owned a bakery at 1407 W. Greenfield in the late 1930s."
Beverle's Kolache
Sugar glaze (see recipe)
1/4 cup sour cream, room temperature
1 package (2 1/4 teaspoons) active dry yeast
1 large egg, lightly beaten
1 cup (2 sticks) unsalted butter, cut into small pieces
2 cups flour
1 cup fruit preserves (about)
Make sugar glaze and set aside.
Combine sour cream and yeast in small bowl. Set aside until slightly bubbly, about 10 minutes. After mixture becomes bubbly, using wooden spoon, add egg and stir until smooth. Set aside.
Using two knives or pastry cutter, cut butter into flour until it resembles coarse meal. Stir in reserved sour-cream mixture until dough comes together.
On lightly floured surface, roll out dough to 1/4-inch thickness. Cut into 2 1/2-inch rounds. Transfer to ungreased cookie sheets, about 1 1/2 inches apart. Cover with clean kitchen towel or plastic wrap. Let sit for 15 minutes.
Preheat oven to 400 degrees.
Make thumbprint in center of each cookie. Fill each thumbprint with 1 teaspoon preserves. Bake until edges are golden, 12 to 15 minutes. Let cookies cool on pans for 5 minutes. Remove cookies to a rack and cool completely. While cookies are still warm, drizzle with sugar glaze. Makes about 3 dozen.
Sugar glaze:
1 cup powdered sugar, sifted
1 tablespoon unsalted butter, melted
1 teaspoon light corn syrup
1 to 3 tablespoons whole milk
Combine sugar and butter. Add corn syrup and mix well. Drizzle in milk a little at a time until the glaze has a runny consistency.
Betty's Kolacky
from Grandma Rosecky
2 cups milk
1/2 cup sugar
2 teaspoons salt
1/2 cup raisins (about; optional; see note)
2/3 of a 2-ounce cake of yeast or 2 packages ( 1/4 ounce each) dry yeast
2 eggs
1/2 cup solid vegetable shortening
7 to 7 1/2 cups flour
Kolacky cheese filling (see recipe) or the filling of your choice
Powdered sugar (optional)
If using cake yeast, heat milk to 80 degrees. If using dry yeast, heat milk to between 110 and 115 degrees. Combine milk, sugar, salt and raisins.
Crumble yeast into milk mixture. Stir until yeast is dissolved. Stir in unbeaten eggs and shortening. Add flour, 1/2 cup at a time, until you have added 7 cups. Add additional flour as needed. Knead on floured board until smooth and elastic, 5 to 8 minutes. Let rise until about doubled in size. Punch down and let rise again.
Preheat oven to 350 degrees.
Spoon out dough by tablespoonfuls, flatten and fill with cheese filling or the filling of your choice. Bring up corners and pinch closed. Place on ungreased cookie sheet.
Bake in preheated oven 15 minutes or until just golden. Watch carefully so pastries do not burn. Let cool and sprinkle with powdered sugar, if desired. Makes about 4 dozen.
Notes: If using raisins, they should first be plumped in a little warm milk.
Fillings that work well in this recipe are the canned variety by Solo. Good choices include poppy seed, prune, cheese and apricot.
Kolacky cheese:
1 1/2 cups baker's cheese (dry-curd cottage cheese)
2 egg yolks and 1 whole egg, beaten
1/2 cup raisins
6 tablespoons sugar
Pinch of salt
Ground nutmeg to taste
Combine all ingredients and mix well.

I have lost the recipe now and am not able to contact my old neighbor. I am hoping a Journal Sentinel reader may have it. It was a very easy recipe and was topped off with bacon bits and real cream.
